SNIF - Safer and more sustainable Natural Ingredients for Food industry: development of analytical technologies and biocatalysed production procedures

The Research fellow will be responsible for the synthesis of biologically active peptides to be used as food additives. In particular, the following activities will be carried out:i) solution-phase and solid-phase synthesis of peptides isolated from food broths;ii) possible scale-up of the production of selected peptides;iii) isolation and analysis of bacteriocins from fermentation broths.
