COCKTAIL – COmbining speCKle paTtern imaging with Artificial Intelligence to reveal miLk adulteration”. Design, Development, and Metrological Characterization of a Speckle Pattern Imaging– Based Optical System for Milk Adulteration Detection

The research activities will be performed within the COCKTAIL project (funded by Fondazione Cariplo), which aims to develop an innovative measurement technique based on speckle pattern imaging and artificial intelligence for the detection of milk adulterants. The research activities encompass the design and implementation of measurement systems based on laser sources, optical acquisition devices, and additional photonic components for the generation and acquisition of speckle pattern images from milk samples. Furthermore, the project includes the execution of experimental measurement campaigns on both animal and plant-based milk samples, including adulterated and non-adulterated specimens,followed by the processing, analysis, and classification of the collected data through the application of artificial intelligence models.
